As far as Final Fantasy 7 goes, my strategy for handling random encounters once I got onto the world map was simply "get Matra Magic as soon as possible and then blow everything up with it until Blade Beam is acquired...then use both."
Didn't hurt that the site of a missile barrage coming out of Red XIII (whom I always gave the Enemy Skill Materia to) looks awesome.
